Roasted Broccolini with Lemon

Sides should never be boring! This grilled broccolini recipe is super simple, using minimal ingredients but packs a punch of flavour. Roasting the broccolini is a great way to bring out the flavour. This one will become a favourite!

Ingredients

3 bunches broccolini

1 cup extra virgin olive oil

2 garlic cloves, crushed

3 tablespoons grated parmesan cheese

Zest of one lemon

Salt and pepper to taste

1 teaspoon sesame seeds

8 drops Lemon essential oil (optional)

Method

  1. Preheat oven to 220°C
  2. Wash brocollini well and cut off lower hard stalks
  3. Cut each broccolini length ways and lay them on a baking tray
  4. Mix all the remaining ingredients in a bowl (leave the sesame seeds out)
  5. Brush the broccolini well with the dressing
  6. Place in oven and cook for 8 to 10 minutes, till the ends begin to char slightly
  7. Allow cooked brocollini to cool for 5min before serving.
  8. Serve on a dish and top with sesame seeds and extra lemon zest.

Roasted Pumpkin with Cumin Yoghurt Dressing

This is the perfect side dish to any meal and full of flavour. Pumpkin will become the new favourite vegetable after you give this recipe a go!

Ingredients

A whole butternut pumpkin, washed

250 mls (1 cup) Greek yoghurt

Extra virgin live oil

2 teaspoons ground cinnamon

2 teaspoons ground cumin

I cup coriander, chopped roughly

1 red chilli, de seeded and chopped finely

100g roasted flakes almonds

Salt

Pepper

Essential Oils: Lemon

Method

Cut pumpkin into thick slices, and remove the seeds.

Place the pumpkin pieces on a roasting tray, and prepare the cinnamon basting oil.

In a small bowl, add the extra virgin olive oil, ground cinnamon and salt and pepper to taste. Brush pumpkin with cinnamon oil and bake them in the oven at 200 degrees. After 20 minutes, turn the pumpkin pieces over and baste with the remaining cinnamon oil, and continue baking for another 15mins.

While the pumpkin is cooking, prepare the yoghurt dressing. In a medium bowl, add the Greek yoghurt, ground cumin and salt and pepper to taste. Add 10 drops of lemon essential oil and mix well. Refrigerate the dressing till you’re ready to serve.

Remove the pumpkin from the oven and let it cool to room temperature before serving.

Once ready to serve, place the pumpkin pieces on a large serving tray. Try to keep all pieces exposed so they all get some dressing.

Drizzle the yoghurt dressing all over the pumpkin.

Add the chopped coriander, chopped chilli and roasted almond flakes.

Enjoy!

Roasted Beetroot, Farro & Bean Salad

When it comes to salads, this one will tick all the boxes. It’s filling, it’s nourishing and packed full of flavour. This salad works well as a side dish but works equally as well as a meal in itself!

Ingredients

1 cup roasted farro, cooked and cooled

420g (1 can) 4 bean mix, rinsed

420g (1 can) lentils, rinsed

1 lemon

3 Spanish onions

500g beetroot

1 bunch parsley, chopped

1 bunch coriander, chopped

Balsamic glaze

Half cup (130 mls ) extra virgin olive oil

Salt & pepper

Essential Oils: Black Pepper & Wild Orange

Method

Chop beetroot and Spanish onion in large pieces and add to a roasting dish.

Cover with half of the extra virgin olive oil (half a cup).

Add salt and pepper to taste.

Roast in the oven at 200 degrees for 25mins.

While the beetroot and onions are cooking, lets make the dressing.

In a small bowl, add the juice of 1 lemon with the remaining half a cup of extra virgin olive oil.

Add salt and pepper to taste.

Add 5 drops of black pepper and 10 drops wild orange essential oils.

Time to start assembling the salad. If you want to make this salad ahead of time, then prep everything till this point, and assemble before serving.

In a large mixing bowl, combine the beans, lentils, cooked farro, parsley and coriander. Add the dressing and mix well.

Add the mix to a large serving dish – we love using fairly flat platters for serving salads like this.

Place the roasted beetroot and onions on top, and drizzle with balsamic glaze.

Dirty Dozen

Deciding to go organic and low toxic is an easy decision to make in your mind. Then it becomes totally overwhelming. Where do you start?

It’s easy it start if you start slow. Make it a slow process. Make a priority list and work through it item by item.

Lets focus on fruit and vegetables first. The Environmental Working Group (EWG) has produced a list of the most pesticide laden fruit and vegetables. The first 12 on this list are referred to as the “Dirty Dozen”. This is a great place to start. These are the most pesticide laden foods. If you and your family eat a lot of items on this list, then try and choose organic for these (where possible of course).

The “Clean 15” list on the other hand identified the non-organic produce least likely to be contaminated with pesticide levels. This is where you don’t always have to reach for the organic option (unless you want to of course!)

When it comes to washing your fruit and vegetables (you do wash them don’t you?), water alone will not remove the pesticides. Soak them in a mix of water and baking soda (plus some cheap white vinegar if you have it) for about 10 minutes, then wash clean. This will remove loads of the crap that is sitting on the skin (and you don’t want invading your body).

What are Essential Oils?

If the first thing you think of when you hear Essential Oils, is a hippie looking lady dancing around burning incense, then you’re probably not alone. Truth is, Essential Oils are probably around you right now. The flowers, the herbs, the trees all around you contain what become Essential Oils.

Essential Oils are the compounds found within the seeds, bark, stems, roots, flowers, and other parts of plants. They can be both beautifully and powerfully fragrant. Essential oils give plants their distinctive smells. Essential oils are the way plants protect themselves and play a role in plant pollination. In addition to their intrinsic benefits to plants and their beautiful fragrance, essential oils have long been used for food preparation, beauty treatment, and health-care practices.

Essential oils can be used for a wide range of emotional and physical wellness applications. They can be used as single essential oils or in complex essential oil blends.

How Can You Use Essential Oils?

Aromatically

Some essential oils induce uplifting or invigorating effects, while others are more calming. Diffusion is one of the simplest methods for using essential oils aromatically. You can achieve the same health benefits by simply placing a few drops of essential oil in the palm of your hand that is then cupped around the nose as you breathe deeply.

Topically 

Topical application is a very effective method for applying essential oils. Because essential oils have low molecular weights and are lipid soluble, they easily penetrate the skin. Once absorbed, they stay in the applied area for a localized benefit.

Although essential oils are readily absorbed, there are many ways to increase absorption. Using a light massage will increase the blood flow to the area of application, in turn improving distribution throughout the body. Use of a carrier oil (such as fractionated coconut oil) can also increase absorption, especially in skin that is dry or flaky as it helps moisturize the skin and slow evaporation of the oil.

Internally 

Certain essential oils have a rich culinary history and can be used as dietary supplements supporting a variety of healthy conditions. When you sprinkle cinnamon on your oatmeal, sip a mug of peppermint tea, or add fresh basil leaves to your spaghetti, you are actually consuming some volatile aromatic essential oil compounds.

When ingested, essential oils directly enter the blood stream via the gastrointestinal tract, where they are transported throughout the rest of the body. Essential oils are lipid soluble so they are readily transported to all organs of the body, including the brain. Then, like all things we consume, essential oils are metabolized by the liver and other organs and are then excreted.

We are Jenny and Tammy. We are not inspirational speakers, life coaches or anything fancy like that. We are best friend mums keeping it real and trying to do the best we can for our families.

Essential Oils became part of our lives a couple of years ago when our children were sick with their first few colds and we started to question the traditional remedies, such as Vicks Vaporub. When we discovered what these products actually contained in them (turpentine and petrol) we were horrified and needed to find something natural but effective.
